I had some friends over to my place last weekend. I made Tomato & Basil pizza for the appetizer. My friends loved it and asked me to share recipe. I thought instead of emailing everyone why don’t I share from my blog. I should have taken a photo so I can share here but it was not planned. Hopefully, I will correct myself next time.

Few Ingredients:
Pillsbury thin pizza crust
Basil pesto
Mozzarella cheese
Grape Tomatoes (or slice of tomatoes)

I always make fresh basil pesto at home. You need following to make pesto.

Fresh basil pesto:
2 cups fresh basil leaves
½ cup freshly grated Parmesan cheese
½ cup extra virgin olive oil
1/3 cup pine nuts (walnuts if you like)
1-2 garlic clove
1.) In a food processor, combine basil leaves, pine nuts, garlic and pulse a few times
2.) Slowly add the virgin olive oil while food processor is on.
3.) Add grated cheese and pulse again until fully blended.
4.) Add pinch of salt and freshly ground black pepper.
5.) This makes about one cup of yummy pesto.

I have made fresh basil pesto but save some time not baking pizza dough from scratch. I really love Pillsbury pizza crust—ready-made dough—it just works perfect for me.

Simple preparation:
Preheat oven to 400°.
Spray crust with cooking spray
Place crust on pizza stone; spread basil pesto; top with fresh sliced mozzarella cheese, tomatoes and sprinkle pinch of salt on the top.
Bake pizza for 7-10 mins or until cheese melts and crust is golden brown from the bottom.
Sprinkle fresh basil leaves on top and serve.

Protein bars are a great snack when you need an energy. You can save lot of money and make a MUCH healthier snack at home. Not to mention, they taste much better and you can make it in minutes!

Ingredients:

1 cup honey
1 cup peanut butter (natural)
3 scoop chocolate protein powder (or vanilla)
Optional mix such as nuts, oats, granola, dried fruit, chocolate chips, etc.

Easy Steps:
1.) In a pan, heat honey over low heat until runny.
2.) Add peanut butter and mix until smooth.
3.) Remove from heat and add protein powder and optional mix.
4.) After well mixed, let it cool. Spread into plastic or foil and refrigerate for at least an hour before cutting into bars!

Tips:
Be creative!
Sprinkle drops of water and mix well to make a nice dough. (if has dry edges)
